"Ma, Bessie is giving less milk and I just can't figure out why."
Growing up on a dairy farm we drank raw whole milk basically straight from the cow. Well, it was run through a paper filter into an ice cream pail, and then put in our refrigerator. No pasteurization and no homogenization. I sometimes still have to resist the urge to shake the milk jug to mix up the cream. If milk isn't homogenized, the cream settles to the top.
Milk is basically water, fat (cream), and other solids. Homogenization is a process of breaking up the fat globules in milk. The process makes them small enough so they stay mixed in the milk. In other words, they are homogenized.
